How an Automatic Wafer Production Line Works

A wafer line turns batter into finished wafer fingers in five linked stages. The baking oven forms thin sheets between heated plates, a cooling section brings them to ambient temperature, the cream spreader builds layered books, the book cooler sets the cream, and the cutter slices the block into fingers ready for wrapping.

1

Bake

The oven forms flat wafer sheets between cast plates and takes them off automatically.

2

Cool and fill

Sheets cool stress-free, then receive cream in single or two-color layers.

3

Set

The book cooler chills cream-covered sheets so the layers hold their shape.

4

Cut and pack

The cutter slices blocks into fingers and passes them on to packaging.

The Five Machines in a ProTrus Wafer Line

Every machine uses stainless steel food-contact surfaces and can be configured around your sheet size, cream layers and output.

Stage 01 · Baking

Automatic Wafer Baking Oven

At the heart of the line, the baking oven forms flat wafer sheets between high-quality cast plates with a chrome-coated surface for even heat. A frequency-controlled reduction drive keeps the run consistent, and manual turning is available if power is interrupted.

  • Energy saving through heat insulation
  • Dough drip prevention with a crawler pump
  • Automatic sheet take-off system
  • Easy-open lids, heat-resistant grease and bearings

Stage 02 · Cooling

Wafer Sheet Cooling

Sheets cool stress-free at ambient temperature after baking and before spreading, with capacity for up to 90 wafer sheets. The cooler is selected to give a cooling time of at least 2–3 minutes, and the archway design lets operators pass through the line without long detours.

  • Up to 90 wafer sheets cooled evenly
  • 2-meter passage height with archway design
  • Stainless steel inner sheeting
  • Modular aluminum frame

Stage 03 · Cream spreading

Wafer Cream Spreading Machine

The spreader applies liquid or solid cream from the mixers onto the wafer sheets using contact or thin-film methods. It is built entirely from stainless steel and is available in single-color or two-color versions.

  • Contact or thin-film spreading
  • Single-color or two-color cream
  • Optional hazelnut dropper
  • Optional weight measurement and full PLC control

Stage 04 · Book cooling

Wafer Book Cooler

The book cooler sets the cream before cutting. The cooling tunnel takes up to 90 cream-covered sheets, handles plate sizes of 290×470 mm and 350×500 mm, and delivers a cooling capacity of 20,000 kcal per hour.

  • Up to 90 cream-covered sheets in the tunnel
  • Plate sizes 290×470 and 350×500 mm
  • Tunnel cooling capacity of 20,000 kcal/h
  • Product correction system at the tunnel entrance

Stage 05 · Cutting

Wafer Cutting and Distribution System

The cutter slices the wafer books from the block cooler into fingers of the size you need and distributes them toward packaging. Single- and double-cutter versions are available, with exchangeable stainless steel cutting frames for clean, accurate cuts.

  • Up to 14 blocks per minute with a single cutter
  • Total waste of at most 5% of each block
  • Automatic infeed unit and optional block turner
  • Exchangeable stainless steel cutting frames

Complete Your Wafer Line with Packaging

Wafer fingers leave the cutter ready to wrap. ProTrus pairs the line with horizontal flow pack machines and an automatic distribution system, so packaging keeps pace with the oven.

Frequently Asked Questions About Wafer Production Lines

Have a question about your wafer line? Ask our engineers.

An automatic wafer production line is a series of linked machines that bake wafer sheets, cool them, spread cream, build and cool wafer books, and cut them into fingers. Automation keeps sheets, cream layers and cuts uniform at industrial speed with little manual handling.

A complete line includes the automatic wafer baking oven, wafer sheet cooling, the cream spreading machine, the wafer book cooler and the wafer cutting and distribution system. Finished fingers can then move to horizontal flow pack machines through an automatic distribution system.

The baking oven makes flat wafer sheets on patterned cast plates, and the sheet cooling is designed for flat or hollow sheets. The book cooler accepts plate sizes of 290×470 mm and 350×500 mm. Tell us your recipe and sheet size and we will confirm the configuration.

The sheet cooler is selected to give a cooling time of at least 2–3 minutes at ambient temperature, with capacity for up to 90 sheets. This cools the sheets evenly and stress-free, so they are stable for cream spreading.

Total waste after cutting is at most 5% of the blocks, roughly 5 mm from each side of a block, depending on the final cutting dimensions. A single-cutter version handles up to 14 blocks per minute, and a double-cutter version is available.

Your wafer type and sheet size, cream layers and fillings, target output, and available utilities and floor space. Recipes or sample wafers help us size the oven, cooling and cutting stages for your plant.
